Bourbon Sweet Potato

Bourbon Sweet Potato

Mary notes: Canned sweet potato is perfectly OK.

Makes 8 servings.

Ingredients:
   4 lbs. sweet potatoes or yam
   1/2 - 3/4 cup Bourbon
   1 stick butter
   1/3 cup orange juice
   1/4 cup light brown sugar
   1 tsp. salt
   1/2 tsp. apple pie spice (ground nutmeg & cinnamon)
   whole pecans or walnuts (approx 1/3 cup)

Instructions:

1. Preheat the oven to 350 degrees F.

2. Boil sweet potatoes or yam in salted water for 35 minutes until tender, then cool and peel. Mash in large bowl.

3. To the potatoes, add the bourbon, butter, orange juice, brown sugar, salt, and apple pie spice.

4. Using a food processor or electric mixer, beat the mixture until it is fluffy and smooth.

5. Put the mixture into a buttered casserole dish.

6. Arrange the whole pecans or walnuts around the edge of the casserole.

7. Bake at 350F for 45 minutes.
